Electric water-cooled knife sharpeners are used not only in sharpening shops, but also in large kitchens, but the quality depends on the skill of the sharpener, the equipment or the need itself. But it often remains at a medium level.
Electric and CNC water-cooled sharpening machines can be rightfully considered the most progressive today due to the speed and quality of processing. These types of units, however, differ in their size and often involve significant financial costs for their purchase and maintenance. At the same time, the price of machining one blade on the line is quite low and makes sense for commercial industrial purposes.
Manual mechanical sharpening systems have the smallest overall dimensions compared to the others described but are much slower compared to power tools. The highest quality of sharpening allows an individual approach to every single customer.
Hence, it is impossible to say that some equipment is worse or better - each has a unique purpose and they are often used in combination.
