#15 Sharpening Story. Nick Riise

My name is Nick Riise, and I currently reside in St. John's Newfoundland, Canada with my wife. We recently embarked on a long journey from Kelowna B.C. Canada to our current home, covering a total distance of 7,166 KM (or 4,453 miles for our American friends). We made the trip in our car, pulling a motorcycle trailer with a Thule topper, accompanied by our three beloved dogs. In preparation for our move, we sold most of our belongings, keeping only the items that held significant value and meaning to us. Among the possessions we brought with us, the majority were kitchen items, including our prized possession - an 8-piece set of Zwilling Cronidur knives. Both my wife and I have a deep passion for cooking, and we both come from food backgrounds. My wife's mother was a home economics teacher, which instilled in her a love for cooking. After graduating from culinary school, she went on to work at some of the most prestigious restaurants in Alberta. As for myself, I grew up working in my dad's butcher shop, where I learned to skin wild game and livestock and grind hamburger. My first knife was given to me by my grandfather, who was a carpenter and wood carver. Unfortunately, I received a deep cut while using the knife for whittling, which cut right to the bone of my thumb. Despite this, many years later, I too got into the restaurant industry and have spent the last 25 years cooking, serving, and bartending. Our kitchen is a place where we spend a significant amount of time, cooking and experimenting with new recipes. I often cut and portion primal cuts, allowing us to have quick meals throughout the week and extravagant meals on weekends with our friends. Our general rule of thumb is "Bring some booze, and we'll cook you a meal." With our cherished Zwilling Cronidur knives, we are able to prepare meals with precision and ease, making our cooking experience all the more enjoyable. Given our food backgrounds, my wife and I both understand the importance of having a sharp, well-cared-for knife in the kitchen. Over time, we have struggled to find reliable knife sharpeners that can keep the precise bevel that we require. As a result, I have conducted extensive research and have concluded that the TS Prof KO3 sharpener is an excellent addition to our lives.
